Swanson’s Great Stuffing Debate + $50 Visa Gift Card Giveaway

Stuffing is traditionally a must-have dish on the Thanksgiving table, but it can also be a great crowd-pleaser come Christmas time as well. Instead of having it the traditional way I always try to jazz it up to make it more Christmas friendly to wow my friends and family. Nearly everyone has a favorite style, yet no matter how well-intentioned, tampering with a family favorite can spark quite the mealtime controversy. That’s why Swanson Broth is inviting people across the country to take a side in the Great Stuffing Debate.

When good people do bad stuffing:
EVERYONE AGREES that it’s not a proper holiday without stuffing. But EVERYONE DISAGREES about what should be in that stuffing. Bread crumbs or cornbread? Dried fruit? Nuts? Sausage? One person’s “yum” is another’s “yuck!” And where there is conflict, there is wicked comedy just waiting to happen.


My youngest daughter Mia dislikes any type of bread that's put into our Stuffing. So, I tried various alternatives until I came up with the perfect solution to satisfy her needs. And if I must say so it's quite delicious.  But I'll let you guys be the judge of that.

Our Favorite Stuffing Recipe: 

Ingredients

1 Container of Swanson's Chicken Broth
2 cups of Long Grain & Wild Rice (I prefer Rice-A-Roni)
3 tbsp.  butter, divided
2 tsp. Lawry's Seasoned Salt or All-Purpose Seasoning
1 tsp. sage
1 tsp. thyme
1/2 tsp. poultry seasoning
1 large onion, peeled and thinly chopped
2 large carrots, peeled and chopped
3 stalks celery, chopped
1 cup dried cranberries (I prefer the bulk blend variety)
3/4 cup walnuts, coarsely chopped
Salt and pepper to taste

Bring broth, rice, 1 tbsp. butter and seasonings to a boil in a large saucepan. Reduce heat and simmer, covered, for 50 minutes. Remove from heat; let stand for 5 minutes, then fluff with a fork. 

Meanwhile, preheat oven to 375ºF. Melt remaining 2 tbsp. butter in a large skillet. Add onion; sauté over medium heat for 10 minutes, stirring frequently. Add carrots and cook for 5 minutes more. 

Remove from heat; stir in celery and cranberries. Season to taste with salt and pepper. Spray a 2-quart casserole dish with olive oil spray. Stir together rice and vegetables; place in prepared dish and sprinkle with walnuts. Tent loosely with foil and bake for 20 minutes; remove foil and bake for 10 minutes more.
