Raspberry Coconut Cake with Raspberry Glaze


Raspberry Coconut Cake with Raspberry Glaze should be in every mama's repertoire, seriously! If your family loves coconut, then you must-try this delicious Raspberry Coconut Cake (Um, like today!). It's SO moist and super, super easy to make! If you're a huge raspberry person (like myself), simply serve this up with some warm homemade raspberry sauce and you'll soon be on your way to some total yumminess, for real! Don't like raspberries? That's okay! You can shake things up and add some lemon, strawberry or almond extract, if you like. I'd also like to point out that the raspberry flavor isn't very strong, but you can taste it.

This particular recipe contains Thai Kitchen Coconut Milk — which can be found on the Asian isle at your local supermarket. And, the center of this cake can be filled with Nestle Crunch NestEggs and some Toasted Coconut Flakes, which would be super cute for Easter. We'd like to thank Nestlé for providing us with all the wonderful Easter goodies to make this super-cute cake. They totally rock!!!!

Raspberry Coconut Cake with Raspberry Glaze

1 Tablespoon of Regular Soy Milk
1 Cup of Powdered Sugar (Gently Sifted)
  1 Stick of Unsalted Butter (Room Temperature)
2 Tablespoons of McCormick Raspberry Extract
7 Nestle Crunch NestEggs
1 (15.25 ounce) box of Pillsbury Moist Supreme Classic Yellow Cake Mix
3 Large Eggs (Room Temperature) 
1/2 Cup Flaked Coconut (Darkly Toasted)
1 can (13.66 ounces) Thai Kitchen Coconut Milk, thoroughly shaken

How to make

In a large mixing bowl, combine the unsalted butter, classic yellow cake mix, eggs, and coconut milk. Mix on medium speed for 2 to 3 minutes, or until nice and creamy. 

Raspberry Glaze

In large bowl, mix 1 cup of confectioners’ sugar, 1 tablespoon raspberry extract and 1 tablespoon soy milk. Mix until smooth. Also, you can add more powdered sugar or soy milk, depending on your taste

It's Oven Time 

Preheat your oven to 350ºF. Grease and flour your Bundt pan. Pour cake mixture evenly into Bundt pan, making sure to scape all cake mix from the mixing bowl. Bake approximately 40 minutes or until wooden toothpick comes out clean, with no sign of loose batter. Cool on wire rack for 10 minutes, then remove cake. Once completely cooled top your cake with the Raspberry Glaze and fill the center with your favorite Nestle candy.
