Um, your child's lunchbox should be FUN and exciting, not BORING! Some kids (especially the younger ones) really enjoy it when their lunch consist of different shapes and sizes. If your child's LUNCH looks like one of their favorite characters, they're most likely to eat them. You can find sandwich and cookie cutters with cartoon characters and animals to help you create a super cute look for your child's lunch. Also, if you're going to make sandwiches for your child, try using various types of breads — it's a great way to introduce them to new textures and flavors. Be sure to complete your child's lunch with some imaginative fruits and veggies. You can also add some peanut butter and raisins to your child's lunch to build some “ants on a log.” Kids love them! For the little ones, you can try putting some olives on the side, to have them count them — it's a great way to introduce them to counting. Now you can give your little ones healthy choices without being too obvious about it. The fun shapes will surely make the veggies look more appealing, too!
Mama's Kid-Friendly Creamy Chicken Salad Recipe
Ingredients
- 2 (12.5 oz) cans of Swanson's Premium White Chicken Breast Chunks (drained and flaked)
- 1 (cup) celery, thinly sliced
- 1/4 (cup) red or yellow onion, finely diced
- 1/4 (cup) Lindsay Naturals Green Ripe Medium Pitted Olives, finely diced
- 2 tablespoons sweet pickle relish
- 1 cup miracle whip
- 2 hard-boiled eggs, finely chopped
- 1 tablespoons mustard, optional
- Salt and pepper, to taste
How to Make It
Boil your eggs, until done. Combine chicken, celery, onion, olives, relish then fold in miracle whip. Chill overnight! The garnish with Lindsay Olives.

ReplyDeleteMy mom is Sicilian and we would shop at stores with barrels of olives when I was a kid. I would have been over the moon happy to get olives in my lunch. I still will sit and just eat olives. Fruit salad is a treat the kids like in lunch.

Chicken salad with Olives sounds amazing. I cannot not eat them as much as I like because the sodium makes my feet swollen. However, a few Olives in moderation rocks my day!
