Let's face it, being a mom trying to keep up with hectic schedules can often times leaves us with little to no time to prepare dinner. But as moms, I know most of us rarely want to rely on fast food to accommodate our busy schedules. With just a few simple ingredients on hand and something from the freezer aisle at your local grocer you can prepare a family meal under 30 minutes. Cheese Enchiladas w/ Rice & Sauce
With five enchiladas in a convenient heat-and-serve tray, our Cheese Enchiladas make a convenient meal for family and friends. We put a heaping portion of delicious cheese on freshly baked corn tortillas, roll them by hand, and place them on a bed of Spanish-style rice. Then we add a traditional red enchilada sauce and top it all with Monterey Jack and Cheddar cheese. Adults and children, alike, will savor every cheese-filled bite!
Review: Out of all of the Family Entree's, I would have to say that the Cheese Enchiladas was a big hit with my family. Of course, I kicked it up a notch by adding in some tomatoes, olives, green onions and added a few pinches of cilantro. The end result: Delicious! The flavors of the cheese wasn't too overpowering and they complimented the meal quite well. Also, I served this with a southwestern salad which made it a complete family meal. So next time your at the store make sure pick up a few and try it for yourself.
Chicken Enchiladas w/ Rice & Sauce

We put a generous portion of savory seasoned chicken on freshly baked corn tortillas, roll them by hand, and place them on a bed of Spanish-style rice. Then we add a creamy suiza sauce and top the whole creation with just the right amount of shredded Monterey Jack and Cheddar cheese. You'll enjoy a rich Mexican flavor experience in every bite!
Review: As with the above entree, I also added in some olives, tomatoes, cilantro, green onions and complimented this Chicken Enchilada Family Entree with some low-fat sour cream. I was pleasantly surprised how good this one tasted. Given that I am no stranger when it comes to making homemade enchiladas, these were actually good and only took under 30 minutes to make. The chicken was quite favorable, but I do however wish they could have been a bit more chunkier in size. But other than that this meal was very tasty.
Chicken Mexicana
With generous portions of pasta and chicken in a convenient heat-and-serve tray, our Chicken Mexicana makes a delicious and convenient meal for family and friends. We combine large, tender pieces of roasted white meat chicken with tube pasta, mix in a white cream sauce with mild Poblano peppers and top it all with Monterey Jack Cheese and a hint of finely chopped parsley. You'll enjoy a delightful Mexican pasta experience that's just right — zesty, but not too spicy.
Review: Surprisingly. I was eagerly wanting to try this one as it had a unique blend of spices. I would have never imagined that a Mexican meal could be enjoyed over pasta. Although, we enjoyed the unique blend of spices, chicken and pasta. I would have to rate this one a 3. I think the Poblano peppers were a bit overwhelming for my kids as they picked them out. Maybe a different version would be better as my kids thought they were too spicy. However, I thought it was good but I much prefer the Enchiladas (seen above). Considering that this was a bit different than what we are accustomed to, I will however try it again to see how it goes.
Spicy Beef Enchiladas w/ Rice & Sauce

We put a full helping of perfectly seasoned ground beef on freshly baked corn tortillas, roll them by hand, and place them on a bed of Spanish-style rice. Then we add a spicy — but not too hot — red enchilada sauce and top it all with real Monterey Jack, Oaxaca and Cotija cheeses. You'll enjoy a satisfying meal with rich Mexican flavor!
Review: Considering that my kids don't like anything spicy, I decided to make this one for me and my husband. Of course, I didn't really add anything to the dish but we did enjoy it with a side salad. It wasn't super spicy but it just enough spice to wake up your taste buds. Overall we enjoyed it and will have it again.
