If you’re looking for a meatless
meal that satisfies, look no further. This isn’t exactly a recipe, but
is meant to inspire you for your next veggie-only dish.
All you do is preheat your oven to 350 F. Then chop up some veggies, herbs and toss them in a some olive oil.

In this photo, we have pattypans, peppers, onions and some tomatoes. Add some
fresh herbs like basil, parsley and oregano OR whatever else you like.
Mushrooms, eggplant, garlic and plenty of other veggies also work well.
Mix all your ingredients and wrap everything in foil on a baking dish. Bake at 350 F for about 40 minutes or so. Drizzle with your favorite balsamic reduction and serve over rice, quinoa or just have it by itself.

ReplyDeleteIt's a round summer squash! You can find them at most grocery stores or the farmer's market. They kinda look like those small, hard pumpkins but they're yellow.

That looks delicious. I don't know that I've ever eaten just veggies and nothing else - but I do like a quinoa veggie taco filling that I had not long ago.

ReplyDeleteI love a stirfry with a bunch of veggies..This looks good I will have to try this..I would love to go on an all veggie diet because I feel so much better when I dont eat fried foods or meat and pasta..What I don't like is the holidays are coming and it is virtually impossible for me to be around all that good food and not eat it..I always say I will start after Thanksgiving..but then I say oh wait Christmas is coming might as well wait..Then comes Easter! haha ;)
